A Loaf of Comfort Food
Rhubarb Bread Recipe
1 cup of brown sugar
2/3 cup of oil
1 cup sour milk
1 tsp baking soda
1 tsp salt
1 tsp vanilla
2 1/2 cups flour
1 1/2 cups diced fresh rhubarb
Beat together brown sugar, egg and oil. Whisk sour milk, baking soda, salt and vanilla and add to the first mixture, stirring well.
Add flour and mix well. Stir in rhubarb.
Pour into two greased loaf pans. Sprinkle with a mixture of 1/2 cup white sugar and 1 tblsp. of butter.
Bake at 350 degrees for one hour or until done.
Rhubarb bread is another great comfort food recipe using up rhubarb.
Tip for souring milk, in case anyone doesn't know how, simply add a few drops of white vinegar to the milk and that will do it.
