RHUBARB AND HONEY COMPOTE

3 cups chopped rhubarb
3 cups strawberries (washed and hulled)
1/4 cup honey

Combine rhubarb, strawberries and honey
Bring to a boil on medium heat
Reduce heat and let simmer for 15 minutes
Serve at room temperature or chilled


GLUTEN-FREE RHUBARB MUFFINS

1/2 cup oil
1 egg
2 tsp. vanilla extract
1 cup brown sugar
1 cup sour milk
1 1/3 cups chopped rhubarb
2 1/2 cups gluten free flour
1 tsp. each baking powder and baking soda
pinch salt

Combine dry ingredients first and gently add in the remaining. Pour into greased muffin tins.

TOPPING

2 tsp. soft butter
1/3 cup white sugar
1 tsp. cinnamon

Mix the above ingredients and sprinkle muffin tops. Bake at 375F for 30 minutes.


GLUTEN-FREE RHUBARB CAKE

1/3 cup margarine
1 tsp. baking soda
1 egg
1 1/2 tsp. vanilla extract
1 cup sour milk
2 cups navy bean flour
1 1/3 cup diced rhubarb

SPRINKLE

1/2 cup brown sugar, 1 tblsp. cinnamon

Pour cake mixture into a 9 x 13 baking pan.

Sprinkle the sugar and cinnamon over top and bake at 350F for 30 minutes.





GLUTEN-FREE RHUBARB RECIPE FOR COFFEE CAKE

1 egg
1 1/2 tsp. vanilla
1/2 cup margarine
pinch salt
1 tsp. baking soda
1 cup milk
2 cups diced rhubarb
1 1/3 cups sugar
1 tsp. xanthan gum
2 cups GF flour mix

Note - xanthan gum is a gluten substitute and stabilizes bread

Combine the sugar, margarine and egg followed by dry ingredients. Add the milk and rhubarb last. Pour into a greased 9 x 13 pan.

Sprinkle with 1 tsp. cinnamon and 1/3 cup brown sugar combined.

Bake 40 minutes in a 350F oven.

RHUBARB-CRANBERRY PIE GLUTEN-FREE

1 tsp. vanilla
1/2 cup corn syrup
1/3 cup butter
1 egg
pinch salt
1 cup rhubarb
1/2 cup dried cranberries
2 gluten free pie shells

In boiling water, soak the chopped rhubarb for 3 or 4 minutes. Drain well. Add all ingredients except for the egg until the mixture cools.

Mix well, and pour into pie shell.
Bake at 400F for 30 minutes.

GLUTEN-FREE RHUBARB CRISP

This recipe combines apples and strawberries as well.

Filling

1/3 cup white sugar
2 tblsp. gluten-free flour
Diced Granny Smith apples 3 or 4
3 cups chopped rhubarb
1 small jar strawberry preserves

Crunchy Topping

1/3 cup GF chopped cookies
1/3 cup melted butter
1/3 cup GF flour
1 tsp. cinnamon
1/4 cup brown sugar

Mix the flour, sugar and strawberries well. Add the sliced apples (cored and peeled) and combine with the rest of the filling ingredients. Spread into an 8" baking pan.

Mix and sprinkle topping evenly over filling.

Bake at 350F for 40 minutes. Let stand to ensure the apples are nice and tender. Tastes especially nice served with cool whip or vanilla ice cream.
