Try the Crockpot-For-Rhubarb
It's not just for meat. You can use your crockpot-for-rhubarb too.
Make great stewed rhubarb dishes to eat by itself, or as a great
topping for ice-cream or cake.
Your crockpot will do all of the work for you.
We are so accustomed to loading up our slow-cookers with meats for the
day, we forget that they can achieve the same results with fruits and
vegetables as well.
If you want to make a tasty sauce, and can't be home to do it, use that
slowcooker-for-rhubarb compote recipes you've been wanting to try, but
just haven't had the time. It will be a nice treat to come home to.
CROCKPOT RHUBARB (Stewed)
4 1/2 cups chopped rhubarb
2/3 cups white sugar
1/3 cup water
2 tblsp. butter
1 tsp. vanilla extract
Combine the rhubarb, water and sugar and place in the crockpot.
Cover and cook on low setting for 6 - 7 hours.
Turn off the machine, add butter and vanilla. Combine well.
Serve chilled.
Slowcooker-for-Rhubarb and Strawberries
6 cups chopped rhubarb
1 1/4 cups white sugar
1 tsp. ginger
1 tsp. cinnamon
1 tsp. orange zest
1/3 cup grape juice
Combine all ingredients and place in slowcooker on low heat for
6 hours. Make sure rhubarb is tender.
Add: 2 cups of raspberries or cut fresh strawberries, and cook for
one more hour on low heat.
This can be served hot or cold over lemon or plain pound cake,
Angel-Food-Cake, or ice-cream, especially vanilla.
