Basic Bread-Machine-Rhubarb-Recipe

There is a bread-machine-rhubarb-recipe or two you can try with
your rhubarb compote. Compotes are very easy to make, and you can
easily vary them to suit your own taste.

The bread machine has been the greatest invention I think, and sure
does eliminate alot of time and mess. I don't make many variations
with mine, but the ones I do make are pretty good.

Bake your bread according to the instructions supplied by the
manufacturer of your machine. I've found there are a few general
guidelines to follow when using these machines.

Liquid goes in first (which would be your compote), and then the
flour. Salt is put in off by itself in a corner to avoid contact
with the yeast before you start the kneading process.

Butter is divided equally and placed in the corners.

Tap the pail down to ensure everything has "settled", and make a well
in the centre. Add the yeast last into the "well" by itself.

Your machine may not mention anything about these guidelines, but
mine does, and I've always followed them.

I've never had any
problems with my breads.

Make your rhubarb compote first before starting your
bread-machine-rhubarb-recipe and enjoy.

Bread-Machine-Rhubarb-Recipe for 1 pound Loaf

Over medium heat, mix together 3/4 cup chopped rhubarb
and 3/4 cup water. You can add the zest of an orange
if you like. This is optional. Bring to a boil, and
then reduce the heat. Let simmer until the rhubarb
has become soft and tender.

Using this mixture, add enough water to bring the
measurement to equal 1 cup. Let cool, and add the
ingredients as per your manufacturer's instructions.

1 1/3 cup whole wheat flour
1 tablespoon butter
2/3 cup bread flour
2 tablespoons brown sugar
1/2 tsp. cinnamon
pinch salt
1 tsp. yeast

Stewed Rhubarb

5 1/2 cups chopped rhubarb
1 1/4 cups white sugar
zest of 1 orange
1/2 cup orange juice

Simmer the above ingredients until the rhubarb
is stringy or falls apart. This should equal 2
cups of liquid. Add this and the rest of the
ingredients as per the manufacturer's instructions.

2 1/2 cups bread flour
1 1/2 cups whole wheat flour
2 tablespoons butter
2 eggs
1 1/2 tsp. ginger or cinnamon
1/2 tsp. salt
2 1/2 tsp. yeast

Does your bread machine have a jam-cycle?

You can make jam also in your bread machine if you
have this very handy feature. Follow the recipe
exactly. Do not substitute or use any less sugars.

Stick to the measurements, because they are measured
out for a reason. This is to ensure your jam sets
properly.

Do not puree the fruit. You can mash it up first, and
use ripe fruit only. Measure it out before it is
crushed, not afterwards.
