Rhubarb-Bread Recipes that are Sure to Delight You
Rhubarb-bread fresh out of the oven...another great afternoon
snack with a pot of coffee or a pot of tea.
Try any or all of these great taste combinations at anytime
of the day. Some could be served over holidays.
There are loaves, biscuits and even rolls to pick from.
RHUBARB-BREAD WITH PECANS AND DATES
2/3 cup oil
1 cup soured milk or buttermilk
1 1/2 tsp. vanilla
1 beaten egg
1 1/2 cup chopped rhubarb
1 tsp salt
1 1/2 cups brown sugar
1/2 cup chopped pecans
1 tsp. cinnamon
1 tsp. nutmeg
1/2 cup finely chopped dates
2 1/2 cups all purpose flour
Gently mix the ingredients. Pour into greased loaf pans.
Bake at 325F for 1 hour.
RHUBARB-BREAD PLAIN
2/3 cup oil
1 1/2 cups brown sugar
1 tsp. salt
1 tsp baking soda
1 1/2 tsp. vanilla
1 egg
1/2 cup chopped walnuts
1 cup sour milk
2 1/2 cups flour
2 cups chopped rhubarb drained (if frozen)
Mix the above ingredients.
Separately in a bowl, mix together some extra brown sugar and butter to form a crumble.
Pour rhubarb mixture into 2 greased loaf pans (8")
Dot the batter with the crumble.
Bake at 350F for one hour, and let cool before cutting.
RHUBARB LOAF WITH CRANBERRIES AND ORANGE-GLAZE
1/2 cup vegetable oil
1/4 cup plain yogurt
1 1/2 cups brown sugar
1 egg
1 cup soured milk
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. vanilla
2 1/2 cups flour
1 1/2 tsp. baking soda
2 cups chopped rhubarb
1/2 cup chopped cranberries
Mix the above ingredients. Pour into 2 greased 9" loaf
pans.
Bake at 325F for one hour. Remove and drizzle with
Orange Glaze if desired. Let cool and slice.
Orange Glaze
Icing sugar, butter and orange juice mixed separately
in a small bowl to your taste.
Apples & Rhubarb? Absolutely!
APPLE AND RHUBARB-BREAD
1 1/4 cup brown sugar
1 1/2 tsp. vanilla
1 large egg
2/3 cup vegetable oil
1/2 cup of chopped apple (or apple sauce)
1 tsp. salt
1 tsp. baking soda
2 1/2 cups all purpose flour
1 cup chopped rhubarb
Gently mix the ingredients and pour into 2 greased standard sized
loaf pans.
Top with
butter, 1/3 cup brown sugar and 1 tsp. cinnamon mixed to your liking.
Bake at 350F for one hour.
RHUBARB BISCUITS
2 cups all purpose flour
1/3 cup white sugar
1/2 cup milk
2 tsp. baking powder
Gently combine and stir all ingredients. Make a ball and
place on a floured surface.
Separately, combine 1 1/4 cups finely chopped rhubarb with
2 tblsp. of sugar and 1 tsp. of vanilla. Toss to mix the
sugar well with the rhubarb.
Add this mixture to the flour mix and knead until the dough
is smooth.
Roll this dough to at least 1 inch thick, and using cookie
cutters cut out biscuits.
Place on parchment paper on a cookie sheet and bake at
350F for 20 minutes.
A little warmed rhubarb compote would be very nice
poured over top.
RHUBARB-BREAD DUMPLINGS MICROWAVED
Combine the following in a microwaveable
casserole dish:
3/4 cup brown sugar
1/2 cup white sugar
1 1/2 cups water
3 1/2 tblsp. cornstarch
3 tblsp. butter
3 1/2 cups diced rhubarb
Microwave the brown sugar mixture on high for 8 - 10
minutes. Stir constantly until well thickened.
In a separate bowl, combine:
1 1/3 cups flour
1/3 cup sugar
1 1/2 tblsp. baking powder
pinch of salt
1/3 cup melted butter
1/3 cup milk
Stir until well mixed. Drop large spoonfuls of batter
onto the rhubarb mixture. Cover with parchment or wax
paper and microwave on high for 6 minutes. Give the
dish a turn a few times.
Remove and sprinkle with cinnamon.
Try this recipe, if you like cinnamon rolls
RHUBARB-CINNAMON ROLLS
1 cup water
1 cup sugar
2 1/2 tblsp. soft butter
Bring the water to a low simmer, and add the sugar.
Stir until well dissolved. Remove from heat.
Add the butter and set aside to cool.
Combine the following ingredients
2 cups all-purpose flour
pinch salt
3 tsp. baking powder
1/3 cup butter
3/4 cup milk
Mix gently, and roll out lengthways one foot long on a
floured surface.
Combine
2 1/2 cups diced rhubarb
1 tsp. cinnamon
3/4 cup white sugar
Spread the rhubarb mixture onto the rolled dough, and pinch
to make a seam down the middle. Make sure it is holding
well.
Cut into one inch pieces, like a jellyroll.
Place pieces in a buttered glass baking dish, and pour the original
water, sugar and butter mixture over the top evenly.
Bake in a 325F oven for 45 minutes.
Let cool down before removing from pan.
