        Scalloped Rhubarb is an IRRESISTIBLE second-helping warm or cold, and SO quick and easy to make.  
Just remove crust from bread, cut into cubes and mix with sugar.  Then mix in diced rhubarb.  Place in a buttered pan and pour melted butter over top.   Pour a tablespoon of water in each corner of the pan, and bake 1/2 hour at 350 degrees.
