Rhubarb-square-recipes are generally easy to find, quick to make, and even tastier topped with ice cream or whipped cream
if you prefer.
RHUBARB OATMEAL BARS 1 cup packed brown sugar 1/2 cup melted butter 1 cup flour 3/4 cup oatmeal
Mix above ingredients until crumbly. Spread 4 cups chopped rhubarb over the top. Sauce 1 cup white sugar 2 1/2 tsp. cornstarch 1 cup water 2 tsp. vanilla
Combine sauce ingredients; cook over medium heat until thickened.
Pour sauce over rhubarb.
Bake 350F 40 minutes.
SOUR CREAM RHUBARB SQUARES 1/2 cup shortening 1/2 cup sugar 1 1/2 cups brown sugar 1 1/2 tsp. baking soda 1 1/2 tsp. cinnamon 1 cup sour cream 1 tblsp. butter 1 egg 2 cups flour 1 tsp. vanilla 1/2 tsp. salt 1 1/2 cups rhubarb chopped 3/4 cup chopped nuts - optional
Mix sugar, cinnamon, nuts and butter until crumbly. Set aside.
Mix remaining ingredients in separate bowl.
Bake 350F for 50 minutes.
CUSTARD-BAR WITH RHUBARB 1/2 cup sugar 1/2 cup butter softened 1 1/4 cup flour
Blend crust ingredients and press into 13"x9" pan. Filling 1 cup sugar 1/2 tsp. salt 2 tsp. vanilla 4 eggs beaten 5 cups rhubarb
Combine these ingredients well. Pour over crust.
