Easy to Make Rhubarb-bars and Squares

RHUBARB-BARS WITH OATMEAL
1 cup packed brown sugar
1/2 cup melted butter
1 cup flour
3/4 cup oatmeal
Mix above ingredients until crumbly. Press 1/2 into a
butter greased 9" pan.
Spread 4 cups chopped rhubarb over the top.
Sauce
1 cup white sugar
2 1/2 tsp. cornstarch
1 cup water
2 tsp. vanilla
Combine sauce ingredients; cook over medium heat until thickened.
Pour sauce over rhubarb. Top with remaining crumb mixture.
Bake 350F 40 minutes.
SOUR CREAM RHUBARB-SQUARES
1/2 cup shortening
1/2 cup sugar
1 1/2 cups brown sugar
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 cup sour cream
1 tblsp. butter
1 egg
2 cups flour
1 tsp. vanilla
1/2 tsp. salt
1 1/2 cups rhubarb chopped
3/4 cup chopped nuts - optional
Mix sugar, cinnamon, nuts and butter until crumbly. Set aside.
Mix remaining ingredients in separate bowl.
Pour into a greased 13" x 9" pan.
Sprinkle top with crumbly mixture.
Bake 350F for 50 minutes.
CUSTARD BARS WITH RHUBARB
1/2 cup sugar
1/2 cup butter softened
1 1/4 cup flour
Blend crust ingredients and press into 13"x9" pan. Bake
10 minutes at 350F and remove from oven.
Filling
1 cup sugar
1/2 tsp. salt
2 tsp. vanilla
4 eggs beaten
5 cups rhubarb
Combine these ingredients well. Pour over crust.
Continue baking for 1/2 hour.
