Rum And Strawberry Cocktail



Rhubarb-daiquiri drinks thickened with pureed fruit are quite tasty. Try a fruity rhubarb-strawberry-daiquiri if you especially love the combination of these two very popular ingredients.

A daiquiri with rhubarb is the choice of beverage if you like rum and a little thicker textured drink.

The addition of any fruity puree with the boiled down rhubarb can be added to enhance the taste. Your choice!

The ingredients are processed in a blender until smooth and creamy. This type texture of a drink appeals to many people. The creaminess is rather soothing. For the best overall result, be sure to pour into a very well chilled cocktail glass and serve immediately.


RHUBARB-RUM-RECIPE

1 cup sugar

3 cups diced rhubarb

5 tblsp. water

1 1/3 cup rum (light)

6 cups ice cubes

2 1/2 tblsp. lime

Bring the sugar, water and rhubarb to a boil. Let simmer covered for about 6 minutes. Remove from heat and let cool.

Combine all ingredients and process in a blender until smooth.

Pour into icy cocktail glasses and serve immediately.

STRAWBERRIES AND RHUBARB

Bring to a boil 1 1/2 cups of diced rhubarb and 3/4 cup sugar.

Simmer until the rhubarb is soft and the sugar has dissolved.

Add 1 1/2 cups of mashed strawberries and continue to simmer for 5 or 6 more minutes.

Remove from heat. Let cool. Add two oz. of rum and 1 tblsp. of lime juice. Add 2 cups of ice cubes and process until smooth.

Serve in chilled glasses. Garnish with a lime wedge, and enjoy!
