A Rhubarb-Mojito is a Nice Change
The rhubarb-mojito is a
cocktail variation of the
original mojito recipe.
It was thought to have
originated in the 1980's
but actually has been around
for quite some time.
Some say maybe even as early
as the 16th century as a
favorite of the old sea
pirates.

The mojito is a refreshing rum beverage flavoured
with mint and lime, and typically known as the
national-cuban-drink.
This drink is enjoying quite an increase in popularity
worldwide. People vary them slightly with their own
types of ingredients, and rhubarb is just one of them.
There are different opinions on how to make the drink
using the most common ingredients. For instance, how
much to mash the leaves with your muddler is one
example. Or, should they be gently stirred in instead?
If you don't have a bar muddler, anything you can use to
squash the leaves with is fine.
How much soda water should be added is another matter
of personal choice.
The lime juice should be fresh. That seems to be a
given. As for garnish? You can use lime wedges,
mint leaves or both. Even a thin stalk of rhubarb
would be a fitting compliment to the rhubarb-mojito.

The recipes call for rhubarb syrup. This is very
easy to make. Simply put a few cups of chopped
rhubarb into a saucepan and add some water. Cover,
and boil down on low heat until the rhubarb is very
soft. Strain the mixture through a sieve, and you
now have your syrup. Add sugar to sweeten to your
own personal taste.

RHUBARB-MOJITO
3 oz. rhubarb syrup
2 oz. white rum
1 oz. freshly squeezed lime juice
mint leaves
Club soda
In a cocktail shaker, add the above ingredients.
Shake to mix thoroughly, and strain into a tall
glass filled with crushed ice. Top with soda.
RUM AND RHUBARB MOJITO
1 1/2 oz. white rum
4 or 5 mint leaves
2 tblsp. fresh lime juice
2 oz. rhubarb syrup
Lime wedges
Soda water
Muddle (mash) the mint leaves with crushed ice
using a shaker or some type of tall container.
Add in syrup, juice and rum. Shake your mixture
very well, and pour into a tall glass. Top it up
with the soda, and garnish with lime wedges.

VODKA RHUBARB-MOJITO
lime wedges
1/2 lime chopped
2 oz. rhubarb syrup
1 oz. triple sec
1 1/2 oz. vodka
8 mint leaves
Place leaves and chopped lime into a shaker.
Mash the items as much as you would like, and
add the rest of the ingredients.
Strain into a tall glass that is filled with
"fresh" crushed ice, and garnish with a thin stalk
of red rhubarb. You can add a bit of soda water
if you like, and gently stir.
BASIL AND RHUBARB MOJITO
6 mint leaves
3 basil leaves
2 oz. white rum
3 oz. rhubarb syrup
2 oz. lime juice
Club Soda
In a tall container or shaker, add the leaves and
mash together. Add the rest of the ingredients and
shake very well to combine. Pour into a tall glass
filled about half-way with crushed ice. Top up with
club soda, and garnish with lime wedges.
