There are some lovely drinks that can be made with rhubarb-vodka combinations.
Whether you like creamy cocktails or jellies, there is a recipe here
for you.
How about a liqueur?
And if you have patience, there are some recipes that will be well worth
the wait when they are ready to drink.
You can certainly change the alcohol combinations for some of them
as well to suit your taste.

RHUBARB-VODKA RECIPE
2 rhubarb stalks
32 ounces vodka
1 tblsp. white sugar
Zest of 1 lemon
3 cloves
1 stick of cinnamon
Method:
Cut rhubarb into small pieces and crush. Place in a large jar and
add all remaining ingredients. Let sit for 1 month, while regularly
shaking well from time to time.
Filter, and let liquid ferment for one more month before
drinking.
Mix rhubarb and sugar in a container and and mix until well coated. Add vodka
and stir again. Cover and let sit for 3 or 4 weeks. Stir once or twice.
Using a cheesecloth, strain the liqueur and throw away the rhubarb.
Pour into bottles and cap them. The longer this ages, the better.
Anywhere from 4 - 6 months reasonable.
RHUBARB AND VODKA JELLY
2 1/2 cups diced rhubarb
1 1/3 cups water
1/2 cup sugar
1 small package of gelatine
4 tblsp. Vodka
1 tblsp. Cointreau
Combine the rhubarb, water and sugar on low heat until sugar is
dissolved and rhubarb is soft. Strain off the liquid. You can
keep the rhubarb aside for garnish if you wish.
Warm the liquid again, and add the gelatine. Stir until dissolved.
Add vodka and cointreau and stir well. Strain into small glasses.
Let chill until the jelly sets. Add rhubarb pieces as garnish if
desired.
RHUBARB AND VODKA SLUSH
8 cups water
6 cups diced rhubarb
Bring to medium boil for 20 minutes. Strain liquid.
Add 3 cups white sugar and stir well until dissolved.
To this, add 1 small box strawberry jello.
1/2 cup lemon juice
1 1/2 cups vodka
Pour this liquid into any kind of freezable container, and put into
the freezer. Give it a stir every hour or so as it turns to slush.
Add 1 cup of vodka before serving.
Fill glasses to at least half, and pour gingerale or 7-UP over top.
RHUBARB-VODKA COSMOPOLITAN
2 oz. rhubarb juice (from a juicer)
1 oz. lime juice
4 oz. vodka
1 oz. orange liqueur
Combine and mix in a shaker with crushed ice.
Pour (strained) into a martini glass.
